Chinese Chicken Lettuce Cups

- 100 g rice noodles
- 2 tablespoons olive oil
- 500 g lean ground chicken
- 2 garlic cloves, crushed
- 1 teaspoon grated ginger
- 1⁄3 cup mild sweet chili sauce
- 1 tablespoon fish sauce
- 2 tablespoons soy sauce
- 1⁄2 cup coriander leaves, roughly chopped
- 4 lettuce cups
directions
- Pour boiling water over the rice noodles.
- Allow to sit for 5 minutes then drain.
- Cut into smaller lengths.
- Heat a wok or non stick pan over a high heat with the oil.
- Add the chicken mince and stir fry for 4 minutes or until cooked through breaking up with a wooden spoon.
- Add the garlic and ginger and fry for a further 2 minutes.
- Toss in the noodles and stir until heated through.
- In a small bowl combine the sweet chilli sauce, fish sauce and soy sauce and stir through the mince.
- Remove from the heat and stir through the coriander.
- Serve in the lettuce cups.

These lettuce cups are just excellent!The ground chicken is a great idea to cut back on calories. We used a hot chilli sauce to add a little zing, garlic and ginger of course are always great together, had no coriander leaves, so used parsley instead. This was a delightful lunch and we will make them again, thanks for sharing.
