- 4 cups cooked chicken, shredded
- 1⁄2 white onion, chopped
- 3 garlic cloves, minced
- 1 (4 ounce) can diced green chilies
- 1 cup diced tomato
- 1 (10 ounce) can enchilada sauce
- 1 (10 ounce) can black beans
- 1 cup shredded cheddar cheese
- 1⁄4 cup chopped cilantro
- 6 flour tortillas, burrito size

directions
- Heat oven to 400.
- Saute onions in a little oil in a skillet.
- When softened, add garlic and cook for about a minute.
- Add chicken, tomatoes, black beans, and green chiles.
- Heat tortillas to make them pliable.
- Turn off heat, add cheese and cilantro.
- Spoon 1/6 mixture on each tortilla and roll up.
- Place on a greased pan and rub top of burrito lightly with oil.
- Bake until golden, about 20 minutes.
- In a separate pan, heat the enchilada sauce.
- Spoon warm enchilada sauce on a plate, lay chimichito on top, add some enchilada sauce and top with a spoonful of sour cream.
