"I saw this recipe on an episode of Sam the Cooking Guy. I modified it for my family and we liked the modified version so much I thought I'd post it here! I use one of those rotisserie chickens from the grocery store for this."

  • Heat oven to 400.
  • Saute onions in a little oil in a skillet.
  • When softened, add garlic and cook for about a minute.
  • Add chicken, tomatoes, black beans, and green chiles.
  • Heat tortillas to make them pliable.
  • Turn off heat, add cheese and cilantro.
  • Spoon 1/6 mixture on each tortilla and roll up.
  • Place on a greased pan and rub top of burrito lightly with oil.
  • Bake until golden, about 20 minutes.
  • In a separate pan, heat the enchilada sauce.
  • Spoon warm enchilada sauce on a plate, lay chimichito on top, add some enchilada sauce and top with a spoonful of sour cream.
