ingredients
- 2 1⁄2 - 3 lbs chicken, cut into serving pieces
- 1 green bell pepper, cut into strips
- 1 (4 1/2 ounce) jar sliced mushrooms, drained
- 1 (1 ounce) envelope Lipton Onion Soup Mix
- 1 (14 1/2 ounce) can whole canned tomatoes, undrained and chopped
- 1⁄2 cup orange juice or 1/2 cup water
- 2 tablespoons brown sugar, firmly packed
- 1 tablespoon vegetable oil (optional)
directions
- In 13 x 9-inch baking pan, arrange chicken,.
- red pepper and mushrooms.
- Blend remaining ingredients; pour over chicken.
- Bake 50 minutes at 425 degrees or until chicken is thoroughly cooked.

We really enjoyed this, especially its simplicity. The baking time left plenty of time to make skillet potatoes. Be sure to use an instant read meat thermometer to make sure the chicken is cooked through. Thanks for posting this recipe, iewe! Made for Top Favorites of 2008 Tag based on loof's review.

What a lovely simple dish to make. I did this to sewrve 2 but still used a whole can tomatoes. I only realised I only had a half packet onion soup mix left so that's all I used & I didn't add the sugar. The flavour was very subtle so I'd like to try again with the full pkt soup but the chicken was lovely & moist & there was plenty of sauce!

Extremely unique and tasty dish! I was a bit skeptical with the addition of OJ to this recipe but stuck to the recipe exactly (other than using only 1 lb of boneless/skinless chicken breasts and keeping all other ingredients the same) and felt this was SUPER flavorful and delicious! I'm not sure I'd classify this as Italian since it tasted almost Caribbean to me...but who cares? We loved it! I did not add the optional vegetable oil and I don't feel it needed it. Served this over white rice and paired it with #88008. DELICIOUS!

Outstanding chicken dish! I used a red bell pepper and boneless skinless chicken breasts, then made just as specified. The orange juice and onion soup mix were all the seasoning that was needed and matched beautifully with the tomatos. My chicken came out fork-tender with a rich, delicious topping. This is a recipe I look forward to making again - thanks for sharing!

Wonderful recipe! I didn't gave the canned items so I used fresh mushrooms and tomato's. I used water in place of juice, no sugar or oil and a boneless-skinless chicken breast.The timing was dead on by I set the temp at 400 as I was only doing 1 breast. The flavor in this is full bodied , deep and very satisfying while being very healthy. A total winner for me.

My teenager is the pickiest eater in the world, while my 3 year old will eat anything (though has been acting more and more fickle lately). Our newest addition was born in June 2008, so she doesn't really know much in the way of varieties of food. My husband says "I don't care what you fix, as long as it has meat in it."

I am (slowly) trying to go thru all the recipes I have saved and add them to 'Zaar, but this will take some time. I try to only post things that my family (or I) will eat (though I haven't necessarily yet tried every recipe I have posted).
