- 1 lb chicken, roasted, cut in 1/2 inch cubes
- 4 stalks celery, chopped
- 3⁄4 cup grapes, sliced in half
- 1⁄3 cup pistachios, shelled and chopped
- 1⁄3 cup mayonnaise
- salt and pepper
- Combine all ingredients and refrigerate till ready to serve.
This is a really flavorful and fruity chicken salad that is a welcome change from the barrage of curried chicken salads. The pistachios are key to the flavor here, giving it a perfect nutty flavor that won't be the same if other nuts are used. Loved this one! Thanks for sharing-
What is a deliciously different chicken salad! I've used grapes before, but never pistachios, and they added such a lovely salty crunch. Used sea salt and coarsely ground black pepper. Perfect lunch for these hot summer days! Thanks for sharing!
