This is a delicious panini. Chicken salad, leftover roasted veggies (Roasted Vegetables), and Provolone cheese. Put this on homemade bread (Anadama Bread) and you have one yummy lunch.

Ingredients Nutrition

  • 2 slices of homemade bread
  • 12 cup chicken salad (your choice)
  • 12 cup roasted vegetables
  • 1 sliced provolone cheese
  • mayonnaise (as desired)

Directions

  1. Spread bread with mayonnaise on the inside and a little butter on the outside.
  2. Put one slice on the panini gridddle.
  3. Add the cheese, chicken salad, and veggies.
  4. Put top slice of bread on and grill.
