- 1 whole chicken

MARINADE
- 59.14 ml orange juice
- 59.14 ml soy sauce
- 44.37 ml orange marmalade
- 29.58 ml peach preserves
- 2.46 ml pepper
- 4.92 ml salt
directions
- Cut up chicken.
- Mix orange juice, soy sauce, orange marmalade, peach preserves, pepper and salt together.
- Marinate chicken in mixture for 2 hours.
- bake chicken in 375 degree Fahrenheit oven for 45 minutes.
- Turn chicken.
- Bake 15 minutes more.

I had to cut this down to just 1 bone-in breast. Unfortunately, my grocery store didn't have peach preserve so I just left it out. That being said, this was a very tasty chicken. I used seasoned salt and lemon pepper. Now I'm going to have to go and buy a whole chicken and try it on that. YUM!! Made for Zaar's Newest Star Tag Game 2012.

I marinated my chicken overnight. When I cooked the chicken I cooked the marinade to boiling, then introduced about half a teaspoon of cornflour to it to thicken it. I used it as a sauce that I spooned over the arranged chicken and brown Jasmine rice (which was perfect with it, though you could even use buttery mashed potato) . Then I topped the served up plates with a tiny weeny bit of grated orange zest and grated ginger and a generous amount of green onion sliced on the diagonal. It tasted and looked lovely. I am going to try this recipe with pineapple juice and preserve. I'll let you know. BTW, cut up your own whole chicken. There are many sites that tell you how. It is not only economical, but it gives you power and confidence in the kitchen. We all need that. Enjoy this recipe. It's so easy and very good.
