Enjoy this quick and delicious snack made with a variety of nutrient-rich, non-perishables including canned chicken, tomatoes and beans, served on a grilled flour tortilla and topped with cheese (if desired) and avocado.

  1. Combine beans, tomatoes, chicken, garlic, jalapeños and cumin in large bowl. Season to taste with salt and pepper.
  2. To heat tortillas, arrange them in single layers on grill over medium coals. Spread chicken mixture over each tortilla. (Optional: Top with cheese. Heat for about 3 minutes, until cheese melts.) Remove from grill.
  3. Top serve, top with sliced avocado and jalapeño, if desired.
  4. Servings: 4.
