Cheesy Stuffed Potato Skins

"I love potatoes as a side dish, and since we are always bbq'ing these are great!"

  • Heat grill. Wrap each potato in foil. Grill for 45 minutes or until tender.
  • Quarter potatoes lengthwise, remove pulp leaving a 1/2 border.
  • In a bowl, blend potato pulp, milk and 1/2 the cheese and pipe it into the skins and top with the remaining cheese.
  • Grill skins for 2 minutes, or until heated. Top with remaining ingredients.
