I've been making this recipe for over 20 years and everyone LOVES it. I couldn't find the exact recipe on so I decided to add it for others to enjoy.

  1. Cook potatoes in boiling water 30 minutes or until tender. Drain. Let cool to touch.
  2. Peel and cut into 1/4 inch strips; set aside.
  3. Combine 1/4 cup butter and onion, sour cream, cream of chicken soup, salt, and pepper in a large bowl.
  4. Gently stir in potatoes and cheese.
  5. Spoon into a lightly greased 13X9X2 inch baking dish.
  6. Combine 3 tablespoons of butter and stuffing mix.
  7. Sprinkle over potato mixture.
  8. Bake uncovered at 350 degrees for 25 minutes or until thoroughly heated.
