Cheesy Baked Orange Roughy

"This is not very fancy, but it sure does taste good! It's what I came up with after my kids refused to eat fish sticks and frozen breaded fish filets...I've tried it with fresh bass and perch, but my favorite is made with Orange Roughy (less fishy-tasting and economical, I think...) NOTE: 60 minutes of the prep time is 60 minutes of marinating time."

  • 1 12 lbs orange roughy fillets (If using frozen, then thaw first)
  • 14 cup butter, melted
  • 1 cup crumbled cheese crackers (I use Cheese Nips and finely crush them in a big baggie)
  • 1 teaspoon parsley
  • 12 teaspoon salt
  • 14 teaspoon black pepper
  • 14 teaspoon red cayenne pepper
  • 14 cup lemon juice

  • Make sure fillets are in even-sized serving pieces. Cover fillets with water and add lemon juice. Marinate 1 hour. Drain filets and pat dry with paper towls.
  • Mix seasonings and cheese cracker crumbs in a flat bowl.
  • Put melted oleo in another flat bowl.
  • Dip each filet in melted oleo and then into crumb mixture.
  • Line a cookie sheet with foil and spread crumbly fillets on top.
  • Bake in a pre-heated 400 degree oven for 20-25 minutes, depending on the thickness of the fillets.
  • YUM!

  1. An interesting and different way ti prepare fish. If you are feeding children or those who don't like spicy things, you might want to cut back on the peppers.
     
  2. I found this recipe to be easy and very good. I did make a few changes and that was not to add the salt and I used cheeze-its instead of the nips but since there is salt on the crackers I thought it would be best to not add more. I also didn't have parsley and I was a little leary in making it without but I had everything else and went for it. I certainly didn't miss the parsley but next time I make it I will try it with the parsley. I've already added this to my "Cookbook". Thanks!
     
  3. My DH & I eat fish 3-4 nights a week so I'm always on the search for new ways to prepare. This recipe was DELICIOUS! I skipped the marinade all together and as we have to follow a lower sodium diet I skipped the salt and used just enough cheese crackers to put a decent coating on each piece of fish. Baked as directed as it was absolutely YUMMY! Definitely will be added to my line up for regular use.
     
  4. Mmmm-fish coated with cheese cracker crumbs. A really good idea and a really good recipe. I used tilapia and skipped the marinating step. Instead, I just sprinkled a little lemon juice over the fish just before putting it in the oven. Great taste!
     
  5. This is a delicious recipe. The fish turned out very flavorful and moist. The use of the cheese crackers makes such a difference in the coating and overall flavor of the fish. The only change I made was to omit the water in the marinade and just used the lemon juice as my roughy had been frozen and I didn't want the texture of the fish to suffer and become "waterlogged".
