  • Combine all ingredients except greens and whisk until smooth or blend at low speed.
  • Chill.
  • When ready to serve, put 2 cups greens on each salad dish and top with dressing.

  1. This was good, but not what I expected. I did not think there was enough blue cheese flavor, I mainly tasted the buttermilk and shallot. Next time I might try with the cottage cheese suggested in another review and with more blue cheese.
     
  2. Not only is this NOTHING like Cheesecake Factory's blue cheese dressing, it's nothing like ANY blue cheese dressing! The directions aren't difficult, so I know I made it correctly, I even added cottage cheese and doubled the blue cheese to try and salvage it! It is extremely watery, has no chunks in it, and has an overwhelmingly powerful onion flavor. I got sick to my stomach, and major heartburn two bites into my salad. Just terrible...and an expensive waste.
     
  3. I have been looking for this taste since I was a teen and my mother and I used to have lunches at a local place in Portland called "The Bag." Theirs was very cheesy and we figured out yrs ago that along with the bleu cheese, they added cottage cheese. I added 1/4-1/2 cup of regular fat (low fat was too sloppy) cottage cheese to this and we dove in! It is gorgeous and a keeper! Thanks so much for posting!
     
  4. I was skeptical at the simplicity of the ingredients but that's exactly what made it work! The shallots were a wonderful accent to the blue cheese. Just using buttermilk and oil (rather than mayo, sour cream, etc.) gave it a light consistency and brought out the flavor rather than burying it. Whisking it worked perfectly. I served it with romaine and cucumbers, with a sprinkling of freshly cracked pepper. My 7 year-old stepson even asked for seconds of salad just so he could have more dressing!
