directions

  • Boxty in the pan (Boxty bread):.
  • Peel the raw potatoes and grate into a cheesecloth; wring over a bowl, catching liquid.

  • Add melted butter or bacon fat.
  • Knead; roll out onto a floured surface and shape into fat cakes. Mark with a cross so that when they cook they will divide into farls (triangles).
  • Bake on a greased baking sheet at 300 degrees for 40 minutes.
  • Variation:.
  • Boxty on the griddle (Boxty pancakes):.
  • Use the same ingredients as for boxty bread, except add 1 teaspoon baking soda and enough milk to make a batter.
  • Spoon batter onto lightly greased pan or griddle and cook both sides over medium heat.
  • Boxty pancakes can be served with butter or sprinkled with sugar.
