  1. Peel and grate the carrots and apple.
  2. Place in a bowl.
  3. Mix the yogurt, honey and lemon juice.
  4. Add salt and pepper and mix with the carrots and apples.
  5. Chill in refrigerator.
  6. Serve.

Really good! I halved this recipe(and left out the salt) and made this at around 5pm in the evening and served it at about 9:30pm for dinner. It was nice and cold and was enjoyed by mom, dad and me. In particular, we love the crunchy celery in this. Thanks for a great recipe!

3 1/2 stars. I think the ingredient quantities are off. Even if using small carrots unless they are extra small. At least taste wise. It does not mention to add the celery which makes this salad better. I used additional red delicious apple and still the carrot was too much, 3% yogurt, creamed honey, no parsley as I didn't notice that was left out of the instructions as well, freshly squeezed lemon juice, sea salt & freshly ground black pepper. Not a salad I would make again.

I think my carrots were too big and my apple too small. I would enjoy this more if they were about even quantities, I think. The strong taste of the carrots overwhelmed everything else.
