Carmen Jackson's Salad Dressing
"I have fond memories of this. Even though I'm 63 I can still taste it. Mama would grab the glass bottle of ketchup, add cider vinegar, oil, smashed cloves of garlic stuck on a toothpick, add salt and pepper and shake. She never measured and it was alway perfect. She would halve an avocado and fill the cavity with it. She also put it over canned peaches and pears with cottage cheese. I am approximating the measurements.

ingredients
- 1 cup ketchup
- 1⁄2 cup cider vinegar
- 1⁄2 cup mild oil
- 2 smashed garlic cloves
- salt and pepper
directions
- Lacking a 50 year old Heinz glass ketchup bottle put all the ingredients in a jar, skewer the garlic cloves on a toothpick and shake.
- Adust vinegar and oil to your taste.
- Refrigerate until ready to use.

We went through a whole jar of this and now my husband wants us to have one in the fridge at all times! At first, I thought it was just okay, but as the garlic marinated in it, the flavor just got better and better. Thanks for posting your mother's very simple and delicious recipe!

I'm finally posting recipes after years of using this site. I want to be able to access treasured recipes without lugging a ton of books south with me when I move to Lake Chapala in Mexico.
Recently retired after 35 years teaching Algebra to 8th graders. I learned to cook at my mother's knee (and Julia Child expanded my vision). She was a 1st generation Swedish-American. Christmas was when we immersed outselves in the Swedish culture and food. Many of the recipes I have recently posted are from her hand-written notes and recipes. My one real regret is that she would never write down the "juice" she used to make pickled herring.
Favorite cookbook? I have over 100 or so. I love reading recipes.
