By Accident BBQ Beef

"I tried to remember most of a beef and noodles recipe without writing it down...turned out the only ingredient I actually had at home was the beef...so I improvised. I was thinking I'd make rice to go with my beef experiment but didn't have any. Had mine on toast, but bun would be much better. I was also too lazy to shred the beef, but you could. This is not at all spicy..so if you want it hot, add your favorite spices."

  • 1 lb stew meat
  • 1 (1 1/4 ounce) envelope onion soup mix
  • 1 (10 1/2 ounce) can condensed tomato soup
  • 1 (10 1/2 ounce) can water
  • 4 buns or 4 rolls, for serving

  • Mix condensed tomato soup, onion soup mix and water in 11x7 baking dish. Whisk until fully combined.
  • Place stew meat pieces in a single layer in soup. Try to keep meat below the surface of the liquid.
  • Bake uncovered at 350 degrees for 2.5 hours.
  • Serve beef and sauce on buns or rolls.

I live by myself, so I'm always tempted to just have a sandwich or bowl of cereal instead of cooking a full meal. I love having a few people over so I can actually cook. I also love being asked to bring things to pot lucks/carry-ins so I can cook for others. My biggest challenge is scaling down family size recipes I grew up with for just myself....though sometimes I give up, make a whole pan of lazagna and eat the same thing for a week :)
