ingredients
- 1 tablespoon lemon juice
- 1 cup milk
- 1 egg
- 3 tablespoons oil
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup flour
directions
- Mix ingredients in a bowl.
- Measure out a 1/3 cup of mixture and spread into a waffle iron.

I was looking for a waffle recipe that didn't have 1/2 cup butter in it and tried this one. (I used a cup of real lowfat buttermilk rather than the milk and lemon substitute). This recipe nicely delivered. Although the "richness" of the butter is missing, with real maple syrup, you'll never miss the kabillion grams of saturated fat. Nice trade-off.
