- 1 lb boneless skinless chicken breast, cut in 1 inch chunks
- 1⁄4 cup buffalo wing sauce
- 1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
- 12 ounces ranch salad dressing or 12 ounces blue cheese dressing
- 2 cups cheese (shredded or crumbles)
directions
- Preheat oven to 400°F.
- Spray a 9x9 or 8x8 inch baking dish with cooking spray.
- In a small bowl combine chicken chunks & buffalo sauce, set aside.
- In large bowl combine potatoes, dressing, and 1-1/2 cups cheese.
- Spread half of potato mix in baking dish, spread chicken chunks over potatoes, cover with remaining potato mix.
- Top with remaining 1/2 cup of cheese.
- Cover with foil.
- Bake in 400F oven, 25 minutes.
- Remove foil bake another 20-25 minutes.
