Breakfast in a Pan Frittata

ingredients
- 1 -2 tablespoon olive oil
- 1 medium red skin white potato, washed
- 1⁄2 medium red bell pepper, diced
- 3 -4 green onions, washed and sliced
- 1⁄2 cup sliced mushrooms
- 3 slices Canadian bacon, diced
- 1 cup egg substitute or 4 eggs, beaten with
- 1⁄4 cup milk
- 1⁄4 cup shredded mozzarella cheese
- salt and pepper
directions
- Using medium shredder blade of food processor, shred the potato.
- Warm olive oil in non-stick skillet, add potato, bell pepper, green onions, mushrooms and bacon.
- Cook and stir until potato is lightly browned and other vegetables are crisp tender.
- Add salt and pepper to taste, pour egg mixture over vegetables.
- Cook until eggs are almost set, running spatula around edges and allowing uncooked egg to run to bottom of pan.
- When eggs are almost set, invert onto a dinner plate and then slip back into pan allowing the bottom to cook completely.
- The last few minutes top with shredded cheese and cover until cheese melts.
- Cut in half and slip onto serving plates.

My husband really liked it for Father's day breakfast, he ate both servings. I did add one more egg and I too did not attempt the flip because it looked too wet, so I put it under the broiler to "fix" the egg and then to melt the cheese. Also, I used regular onion and Simply Potatoes (pre-shredded). I added the mushroom and bacon later than onion, pepper, and potato.

This was certainly Breakfast in a Pan - very filling! I made this all the posted ingredients, except I substituted some diced ham for the Canadian bacon. Once I poured the Egg Beaters in, I put the pan in a 350 degree oven and baked for about 20 minutes (that is how I am used to cooking a frittata). Very tasty (and it reheats in the microwave pretty well too)! Made for ZWT7 by a Hot Pink Lady.

My DH adored this. I made it as an easy dinner when I got home late one night. Simple to put together. I used a couple of handfulls of frozen hash brown potatoes and ham in place of the bacon. I even tried to flip it. No such luck. I was able to flatten most of the uncooked egg portion out to finish cooking. Tasted great!!!

I came to this site in March of 2004. It was then called Recipezaar. This site was the first on-line site that I ever joined. I first popped in 2003 while searching for a Peach Cobbler Recipe. In March of 2004, DH was having shoulder surgery and I was looking for a Split Pea Soup. Once again I found myself on Zaar as it came to be called.
Over the years I hung out and learned from some of the best home cooks in the country, I posted over 700 recipes on the site, reviewed over 3500 recipes and posted over 3000 food photos. Over the next 10 years the site made many changes and in 2010 it was sold to to Food Network and became Food.com.
Until last year we played games, talked and shared with one another. As a result of the community and the relationships I built I got to meet some wonderful people from all over the country. I also have a great number of friends that I have never meet face to face. Some of us still hang out at various places across the net.
Zaar was more than a cooking community. It was an internet community of friendship. Life is an adventure ever changing.
