Breakfast Hash Brown Omelette

- 6 slices bacon
- 3 cups frozen hash brown potatoes or 3 cups shredded cooked potatoes
- 1⁄2 cup chopped green pepper
- 1⁄3 cup bick's onion relish
- 6 eggs
- 1⁄4 cup milk
- salt and pepper
- 1 cup shredded cheddar cheese
directions
- Cook bacon in 10-inch frying pan until crisp. Remove from pan. Drain and dice.
- Leave 2 tablespoons drippings in pan. Add potaotes. Cook, stirring occasionally, until heated through. Add green peppers and relish. Cook 15-20 minutes or until underside is starting to brown.
- Beat eggs, milk, salt and pepper in medium bowl. Stir in cheese and bacon. Pour evenly over potatoes. Mix slightly to let egg mixture seep through potatoes.
- Cover; cook on low for 8-10 minutes, or until eggs are set. If desired, broil lightly to brown. Loosen edges. Serve in wedges.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
