  • Cook bacon until browned and crisp.
  • Drain on a paper towel and set aside.
  • When bacon cools, break strips in half.
  • Slice each tomato into 6 thin slices.
  • then cut each slice in half.
  • Butterfly each croissant.
  • Spread a thin layer of mayonnaise on each croissant half.
  • Place 1/2 lettuce leaf on one side of each croissant.
  • Place 1/2 slice of tomato on top of the lettuce.
  • Top tomato with 1/2 strip of crisp bacon and close croissant.
  • Serve on a platter.
  • For potlucks, I wrap each croissant in plastic wrap or in a sandwich bag.
