A really easy, really good recipe.
- 1 (15 ounce) can black beans, rinsed and drained
- 4 ounces monterey jack pepper cheese, cut into 1/4 inch cubes
- 1 (10 ounce) can corn, drained
- 1⁄4 cup green onion, sliced
- 3 1⁄2 cups celery, sliced thin
- 1 small red pepper, diced
- 3⁄4 cup picante sauce
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1⁄2 teaspoon ground cumin
- 1 garlic clove, minced
- Combine well and chill before serving.
