Bill's Slightly Glazed Carrots

A healthy, light way to add a touch of sweetness to carrots.

  1. Place carrots, cut lengthwise, quartered into 3-inch pieces, in a saucepan, barely covered with water.
  2. Add honey and salt and bring to a boil.
  3. Reduce heat; simmer, uncovered, until carrots are tender.
  4. Increase heat and boil off excess water. Remove pan from heat and let cool slightly.
  5. Stir in butter.

Ok, so we are not a cooked carrot kind of family...normally. Today I baked a huge turkey, cooked green beans that were canned from my garden and wondered what to do with the organic carrots in the fridge. Well, I tried this recipe and it is a winner!!! My son asked for seconds and they got a thumbs up from my husband. Even my picky youngest son ate all of them! This will go in my favorite recipes for sure. Thanks for posting!

These were sensational! My 2 year old is a very picky eater and he devoured these! I halved the recipe for the 3 of us, but other than that I followed it exactly! This would be a great side dish for a family get-together!
