The tastiest meatloaf I've ever had! Received this recipe from a coworker. Rave reviews are received from everyone who tries this recipe. Leftovers make great sandwiches, too!
- 2 lbs ground beef
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1 (4 ounce) can mushrooms, drained
- 20 saltine crackers, crushed
- 2 eggs, beaten
- 1 medium onion, chopped
- 1 cup oatmeal
- 1 teaspoon salt
- 1 teaspoon pepper
- Mix all together, place in pan, forming a loaf like shape. Bake at 350 for 1 hour and 20 minutes.
The family enjoyed this recipe - didn't have the can of mushrooms and oldest DD didn't miss them since she doesn't care at all for the fungi.
