- 1 cup butter (salted or unsalted)
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 1⁄4 cups peanut butter (smooth or crunchy)
- 2 1⁄2 cups white whole wheat flour
- 1⁄8 teaspoon salt
- 2 teaspoons baking soda
- 11 -12 ounces semi-sweet chocolate chips
directions
- Cream butter and sugars until combined.
- Add vanilla.
- Add eggs one at a time, blend until light and fluffy.
- Add peanut butter, mix to combine.
- In a separate bowl, combine flour, salt, and baking soda. Whisk well to break up any lumps.
- Add dry mixture to wet mixture. Combine well.
- Fold in chocolate chips.
- Refrigerate till firm.
- Preheat oven to 350F (325F convection).
- Roll into 1 1/2" balls. Place on cookie sheet 2" apart.
- Bake for 8-10 minutes. Cookies should be slightly cracked on top, but not too dry.
- Makes 3 dozen cookies.
