  • Preheat oven to 350 degrees and grease 8x8 baking pan.
  • Filling: Combine berries and water in medium saucepan. Bring to boiling. Combine splenda and cornstarch; stir into fruit. Cooke and stir over medium heat until thick and bubbly. Cook and stire 2 minutes more; set filling aside.
  • Cake: In a medium bowl, combine flours, splenda, baking powder, and baking soda. Cut in butter until mixture resembles course crumbs. Add baby food and use pastry cutter to cut it inches Mixture should still resemble course crumbs. Make a well in the center; set aside.
  • Combine milk, egg whites and vanilla. Add all at once to flour mixture and stir until just combined. This will be lumpy!
  • Spread slightly more than half of mixture into an 8x8 baking pan. Spread filling over batter. Drop remaining batter in small mounds over filling.
  • For Topping: Mix flour and splenda. Cut in butter until mixture resembles course crumbs and sprinkle coffee cake.
  • Bake at 350 degrees for 40-45 minutes or until golden. Serve warm.

  2. Very nice coffee cake. I used fresh strawberries and blueberries. Very easy to put together. I did use melted butter for the topping and it turned out great. Made for ZWT 6.
     
  3. Your recipe was pretty much followed, although I did use frozen mixed berries (raspberries, blueberries & marionberries) & ended up with an extremely nice tasting coffee cake! I served it with a small scoop of frozen vanilla yogurt & had happy campers all around (especially me, 'cause I ate almost 1/4 of it myself)! Will definitely be interested in making this again!   4. This was a very yummy coffee cake. I departed from the method of making it in an 8x8 pan, and instead I made it as a mini-bundt. So I put about 2/3 of the batter in the bundt, then the berry filling, then crumbled the streusel on top of the filling, then put the rest of the batte in a smooth layer over the surface. It came out as a tunnel cake, with the berry filling resting on a mound of cooked streusel inside the cake. Everyone I served it to loved it. But, a word of caution for anyone else who wants to try to make it that way -- let it cool about half an hour in the pan before trying to invert the cake to a platter, otherwise the filling is still too loose and runny, and the cake falls. (Half of my cake fell, half didn't. Go figure that one out!) Thanks for the delicious recipe, Brooke! Made for PAC Spring 2008 Orphanage.

In our family we also have two cocker spaniels, our puppy Laci (above) and Peanut, that we adore like they were our children. <br> <br>We live in an old farm house that we are remodeling (did the library and the kitchen so far....) on the outskirts of town.
