- 2 lbs 93% lean hamburger
- 2 (4 1/2 ounce) cans of diced chilies
- 8 ounces sour cream
- 4 cups , taco or 4 cups mexican shredded cheese
- 2 (1 ounce) packets taco seasoning
- 1 (10 ounce) can cream of chicken soup
- 1 (8 ounce) jar taco sauce, Medium spicy
- 8 -10 large burrito-size flour tortillas
directions
- Brown hamburger; drain.
- Mix in both packets of seasoning along with 1 small can of chilies. Simmer.
- In a separate bowl, mix sour cream, cream of chicken soup, 1 can of green chilies, and a generous pour of Taco Sauce. Don't worry about over doing it on the Taco Sauce.
- Preheat oven to 350.
- In an ungreased glass 9 x 13 pan, spread a portion of the sauce mixture to coat the bottom. Don't go too thin or the enchiladas will stick.
- Spoon beef mixture into each of the flour shells. Tuck in the sides and roll up. Line them into the 9 x 13 pan.
- Cover the burritos with the remaining sauce.
- Top with cheese. Use 90-100% of the 4 cups.
- Bake in oven for 35-45 minutes. Serve with extra Taco sauce and a side of jalapenos (optional).
