ingredients
- 4 (6 ounce) orange roughy fillets
- 3 tablespoons lemon juice
- 1 tablespoon butter, melted
- 1⁄2 cup crushed barbecue potato chips
- tartar sauce (optional)
directions
- Place orange roughy in a greased 13x9 inch baking pan.
- Combine lemon juice, and butter, and pour over fillets, and top with crushed potato chips.
- Bake uncovered at 400 degrees for 20-25 minutes or until fish flakes easily with a fork.
- Serve with tartar sauce.

I love fish and this one was pleasing. The market in my area didn't carry orange roughy, so I used cod loin which was on sale. The lemon/butter mixture sure did add great flavor. Though I did like the barbecue chip flavor, it did taste like chips on fish. Found that it is a great idea to use it along with more ingredients as a fish stuffing to round-out the flavors. I'm going to use this idea again as it is a great way to pump up some great flavors. Thank you weekend cooker for sharing. Tagged it for PRMR.
