  1. Marinate chicken in BBQ sauce, then bake at 350 degrees for 30 minutes. Cut into pieces and place in fridge.
  2. Combine chicken and salad ingredients in a large bowl and toss.
  3. Serve with Ranch dressing, bbq sauce, and crispy corn tortilla chips.


Most Helpful

I used 1/4 c red onion and red bell pepper in place of the jicama since I didn't have any on hand. I'd like to try this with rotelli or wagon wheel pasta in place of the lettuce.
