Basil Pesto Sauce

"A simple and delicious basil pesto sauce"

• Yields: 1 cup

ingredients

• 1 1⁄2 cups fresh basil (packed cups, about 2 oz)
• 1 1⁄2 garlic cloves
• 1⁄4 cup grated parmesan cheese (1 oz)
• 1⁄4 cup olive oil
• 2 tablespoons pine nuts (0.5 oz) or 2 tablespoons almonds (0.5 oz)
• 1⁄4 cup chopped fresh parsley

directions

1. Put pine nuts or almonds in a dry skillet.
2. Toast on medium heat (4/10) until they are browned (stir frequently and keep a close watch it doesn't take long).
3. Combine all ingredients into a food processor or blender.
4. Blend until a smooth paste, adding extra olive oil as necessary to get proper consistency.
