ingredients
- 2 cups semolina flour
- 2 cups all-purpose flour
- 1 - 1 1⁄4 cup tepid water
directions
- Place both types of flour in a large mixing bowl and stir to mix well.
- Make a well in the center of the flour mixture and add water a little at a time, stirring with your hands until a dough is formed.
- You may need more or less water, depending on the humidity in your kitchen.
- Place the dough on a floured work surface and knead it like bread for 8 to 10 minutes until smooth and elastic.
- Cover and let stand for 10 minutes at room temperature before using.

My dough recipe calls for eggs and I needed on without for my daughters since she is allergic. DD's school serves ravioli's and she can't have theirs b/c they have eggs in them. I decided to make my own and freeze them so when the school serves ravioli's, she can bring her own and feel like she is eating with the rest of them. I sub'd the all-purpose flour with whole wheat flour and added just a tad more water. PERFECTO! My husband loved them and so did my DD. I couldn't even tell the difference between this recipe and my own. Thanks! This is a keeper.
