Basic Buttermilk Waffles

"Rich and delicious, easy and satisfying; my favourite waffle recipe. No sugar, but you don't really miss it, especially when drizzled with syrup! And yes, one *tablespoon* of baking powder is correct! Cook time is per waffle in my iron.   • Sift together the dry ingredients.
  • Add the buttermilk, eggs and melted butter, mixing until there are no more lumps.
  • This will make a very thick batter.
  • Bake in a waffle iron according to the manufacturer's directions.
  • *Note*:You may substitute an equal amount of yogurt, sour milk, sour cream, or cream for the buttermilk.

  1. This is a good basic waffle recipe, and you don't need any sugar to make it flavorful. I do think that beating the egg whites and then folding them into the batter would make these waffles lighter.

  3. I ended up making 3 batches of these. My kids just kept eating them. I did thin the batter down with a little bit more buttermilk so the batter would fill the waffle iron. I also make extra for the freezer. This will more than likely be our first choice for waffles.
     
  4. This is a really good recipe. I used 1/4 cup Lighter Bake instead of the 1/2 cup melted butter and they turned out great! When asked how they are, my five-year-old replied, "Delicious!" Next time I will try using 1 cup each of all-purpose flour and whole grain white flour to boost the nutrition a bit. I was able to make 6 (6" square) waffles from the recipe.

Tweaks

  1. Smells great. I did do a few changes, just for our family. I did one cup white and one cup whole wheat flours. Then, instead of using butter/margarine, I added applesauce. Also put a little vanilla and freshly ground nutmeg and wheat bran. Excellent base recipe. So easy to fiddle with.

I work as a part-time nurse in our city's burn unit. In my spare time, I really enjoy browsing cookbooks, cooking magazines, and the web for recipes. I am always looking for new ways to combine common ingredients to mix things up a bit. I try to avoid recipes that call for bizarre or hard-to-get ingredients or require a special kitchen widget I will only use once. If someone were to give me something unusual, I certainly would give it a try! However, my husband and I are adventurous diners and are always willing to try something new at least twice (in case there was a problem the first time!) We enjoy everything from German to Japanese; we want to try Vietnamese next. My husband and I own a Gold Wing motorcycle and love to travel in the warmer months. We also have three dogs: Roxy, who is a rather large (42 lb.) fox terrier cross (shown above, with me!), Shadow, who is pure-bred reverse-brindle boxer, and Maggie, a brindle boxer. They love it when "Mom" cooks because they know something yummy inevitably hits the floor!
