- 1 (1 ounce) package sugar-free instant vanilla pudding mix
- 1⁄4 teaspoon almond extract
- 2 small ripe bananas, mashed
- 2 egg whites, stiff beaten
directions
- Prepare pudding according to pkg directions.
- Stir in extract.
- Cover surface of pudding with waxed paper and cool to room temperature.
- Fold in bananas and egg whites.
- Spoon into 10 paper bake cups in muffin pans and freeze until firm.
- Let stand at room temp 30 minutes before serving.
