Banana Caramel Parfait

"A quick low fat version. Taste so good you wouldn't think it was even low fat ^_^ but you can always make the fattening version, if you wanna increase your waistline (hahaha)."

  • 2 ounces biscotti (i use hazelnut)
  • 8 tablespoons fat-free caramel topping
  • 4 cups low-fat vanilla ice cream (or frozen yogurt)
  • 4 bananas, thinly sliced
  • 1 cup fat-free whipped topping

directions

  • Place biscotti in a ziplock bag, crush with rolling pin (or something heavy).
  • Remove lid from caramel topping and microwave for 30 secs until melted.
  • Slice the bananas and set aside.
  • Scoop 1/4c of ice cream into a parfait glass and top with sliced bananas then a lil caramel followed by a lil whipped topping.
  • Create another layer same order, then top with a little bit of the biscotti and caramel for presentation ^_^.
  • So simple! Try this recipe with different flavor combinations like chocolate biscotti, ice cream, whipped topping and chocolate sauce. Kids love this and you're getting them to eat fruit ^_^.

  1. What a quick and easy decadent tasting dessert! We loved it. I had to use a crumbled oatmeal cookie, because I didn't have any biscotti on hand, but it was delicious just the same. A lovely recipe discovery for Pick A Chef Fall 2007.

im 21 im a great cook im fun and adventurous i love tryin new things! im into different cultures and their food ha ha! i have a 3yr. old son who i've convinced to always eat all the veggies and to be healthy! i like to be healthy and eat healthy but i occasionally will spoil myself with something decadent! i am a stay at home mom and i do in home daycare! my fav. tv chefs are ALTON BROWN & PAULA DEAN but she is a butter addict so i usally remake allll her recipes ha ha. i like to bake and cook but i think im a much better cook than i am a baker. im a gemini so i am fickle and i'm always changing my mind! but it will always remain that i LOOOOOVE seafood the most! crawfish and lobster are sooooooo yummy! also shrimp and crab oh and scallops mmmmmmmmm anyway i will post the occasional recipe. mostly healthy ones that i,ve made up or remade. i really wanna explore new recipes though and try them out on my guinea pigs ahem i mean family! lol well cin cin (chin chin)
