This is extremely simple, yet delicious! Baked in the microwave, it is a quick, easy, and healthy alternative to the typical baked russet potato.
- Rinse and clean sweet potato, making 6-8 deep holes in it with a fork.
- Cook in the microwave on high for 12-14 minutes, turning the potato upside down in the middle of the cooking process.
- Open the potato with a knife and add butter.
- Return potato to the microwave and cook one more minute at 80% of power.
- Add sugar and pecans.
- Serve immediately.
