This is a delicious evening snack or side dish to any meal...these potato skins taste so good!....better make a double batch, these might not even make it to the table!

  • 4 potatoes, baked (do not boil or microwave potatoes)
  • 1 -2 tablespoon oil
  • 34 cup favorite pizza sauce
  • 14 cup finely chopped green pepper
  • 14 cup canned mushroom, well drained,and finely chopped
  • 1 12 cups grated mozzarella cheese

Directions

  1. Set oven to Broil.
  2. set oven rack to second highest position.
  3. Grease a baking dish (large enough to hold skins).
  4. Cut baked potatoes in half.
  5. Scoop out cooked potato, and reserve for another use.
  6. Arrange skins cut side up in baking dish.
  7. Rub skins all over lightly with oil.
  8. Brush each potato skin with 1 or 2 tbsp pizza sauce.
  9. Sprinkle with green pepper and finely chopped mushroom stems.
  10. Top each with grated mozza cheese.
  11. Broil in oven 5-7 mins, or until skins are crispy, and cheese is melted.

Made these tonight for the family for a snack and we all liked them very much. They lend themselves to many variations and I look forward to trying them again with other add-ins.
