Easy side dish that is smoky, sweet and savory. Great served with pork chops or roast. Simple and elegant.
- 1 cup sweet potato, peeled and diced
- 1⁄2 cup butternut squash, peeled and diced
- 2 tablespoons butter
- 3 slices cooked bacon, crumbled
- 2 tablespoons rosemary, minced
- 1 tablespoon maple syrup
- Preheat oven to 325°F.
- Toss squash and potatoes with remaining ingredients.
- Bake 40 minutes or at 375°F for 20 minutes.
- Stir halfway through baking.
