Bacon Chicken Alfreddar

- 1 lb bacon
- 1⁄2 cup butter
- 3 lbs chicken breasts, cubed
- 1⁄4 teaspoon garlic powder
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 teaspoon dry onion flakes
- 2 Maggi chicken cubes
- 4 cups water
- 4 -6 ounces parmesan cheese
- 12 ounces evaporated milk
- 3⁄4 cup self-rising flour
- 1 cup milk
- 1 1⁄2 cups cheddar cheese
directions
- Cook bacon in a large skillet. Cube chicken. Remove bacon from the skillet and place on paper towel to drain.
- Add butter to bacon grease in skillet and melt. Cook cubed chicken in butter bacon grease with seasonings (garlic powder, salt, pepper, dry onion flakes).
- Once chicken is no longer pink in middle, crumble bouillon cubes into skillet and add water. Simmer for 10 - 15 minutes on med-low to low heat.
- Blend in Parmesan cheese and evaporated milk into skillet. In separate dish, mix whole milk with flour and wisk to prevent clumping then add to skillet.
- Sprinkle cheddar cheese on top and blend until melted. Remove from heat and serve over rice.

I do something a little different than most people. Instead of OAMC, I do OAMS (once a month shopping). I have a large family and a small grocery budget. Feeling convicted about overspending on groceries (by going to the store everyday or every other day "to pick up something for dinner") pushed me to sit down and concentrate on making a detailed 4 week menu and shopping list.
