directions

  • Preheat the oven to 375F.
  • Clean the artichokes by peeling the stems, chopping off the top third, and peeling off the outer, tough leaves.
  • Keep the prepared artichokes in a bowl of water with a little lemon added to prevent discoloration while you finish cleaning the rest.
  • In a small gratin dish large enough to hold them all, add the artichokes, the garlic, olive oil and white wine.
  • Add a little water if needed to bring the level up to almost cover the artichokes, cover, and then bake them in the preheated oven until they are tender.
  • Usually this will take between 20 to 30 minutes.
  • Remove the artichokes from the oven, and increase the temperature to 425F.
  • Pour off any excess liquid from the cooked chokes, and set aside.
  • Mix together the ingredients listed for the topping, and sprinkle this over the artichokes in the casserole dish.
  • Drizzle on a little additional olive oil, and bake the archokes just until the topping becomes golden brown.
  • Serve immediately, or at room temperature.

  3. I tried this recipe and had poor results. I followed the directions as you listed, but the artichokes came out tough and tasteless. Any ideas for me?

  4. Thanks for recommeding this Ev! It was fantastic. The wine and garlic with the artichokes is perfect! I will be making this often.

  5. The baby artichokes here in Brazil must be realy tiny: I used 24 of them and 1 cup breadcrumbs was too much. But that's not a problem, the seasoned breadcrums tasted much better before baking! Txs evelyn for another great recipe.

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages! I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure. So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call. What did I do wrong? Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths. I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
