Avocado and Shrimp Tomato Cups

"Do you like guacamole, shrimps and fresh tomatoes? Then this is the perfect first course to serve at a Summer dinner party. The guacamole is served in the tomatoes to make it extra elegant."

  • Cut the tops off the tomatoes. Take out the insides with a spoon. You might have to take a slice off the bottom to be able to stand them flat. Sprinkle with salt, pepper and olive oil.
  • Cut the Avocado in half and take out the seed. Take out the flesh and chop it really small.
  • Mix the Avocado with the yogurt, tapenade, lime juice, garlic, salt and pepper. Try mashing the avocado a bit while mixing.
  • Taste and adjust seasonings, Fold in half of the shrimps.
  • Fill the tomatoes. Use the other half of the shrimps to top the tomatoes and sprinkle any extras around the tomatoes.
  • tips: You could add in chopped cilantro. You might chop up some of the insides of the tomatoes and mix it in with the filling. You could chop up a few tablespoons of red onion and mix it inches.

  1. I made this for a lunch main dish so did make a few adjustments. I used 2 large tomatoes (approx 4"), cut each into petals leaving the bottom intact, and then divided the salad between the two. The tomatoes were plated on leaf lettuce and served with crudites and wasa crisps. It made for a very enjoyable lunch on a hot day! The guacamole was very loose, but my avocado was ripe so that might have made a difference. Next time I will add the yogurt a little at a time. I was using frozen shrimp so after thawing I squeezed them to eliminate as much water as possible. The filling is very tasty and I loved the addition of the tapenade. I found the salad had slightly too much garlic for us. I did add the onion & cilantro as mentioned in the optional ingredients. I thought the filling would work well in cherry tomatoes for an appetizer buffet or tray too.
     
  2. This was very filling, like dinner instead of a first course. It had plenty of taste, although I wasn't keen on the tapenade mixed with the avocado -- it created an unappetizing color and detracted, IMHO. I would use smaller tomatoes for an appetizer, or even just one slice, and cut back on the amount of avocado topping to conserve calories. Made for Summer 2009 Category Craze-E Contest.

I grew up in Germany but my background is German/Spanish/Irish/Native American. I would say my cooking style is a mix of all of them. I like to cook simple clean food. I usually don't use any packaged or processed products. Most of the time I make everything from scratch. I use only organic meat and dairy products and many other organic products and I believe it makes a big difference not only healthwise but also in taste. We have two kids. A 3 year old and a 9 year old. I try not to adapt the food for them too much. They are used to eating what we eat. Growing up I didn't really learn how to cook. At least I didn't care enough to remember anything.But living centrally in Germany I was able to travel and eat European food in it's respective Countries: Italian food in Italy, Spanish food in Spain, French food in France and so on. I really missed that when I moved to the States. I started cooking the week after I got married and have been cooking and teaching myself ever since. Now cooking is not only one of my two hobbies (photography being the other one)but I also see it as therapy. It calms me down after a stressful day, it cheers me up when I feel down and it helps me center my thoughts when I have a lot on my mind. :) Thank you so much to whoever gave me the gift of premium membership.
