These bowls are a slightly healthier version of the KFC bowls. I take them to work for lunch and eat them at home. This is a great way to use left-over mashed potatoes! If you already have mashed potatoes, skip to step 5. Amounts of ingredients in the bowls should be adjusted for personal preference.

Ingredients Nutrition

  • 4 small potatoes
  • 118.29 ml milk
  • 59.14 ml grated cheese (I like colby jack)
  • 396.89 g can whole kernel corn
  • 24-36 piece cooked popcorn chicken
  • 28.34 g envelope brown gravy mix

Directions

  1. In a large pot, boil 6-8 cups water.
  2. Cut potatoes into cubes, add to boiling water.
  3. Boil potatoes until soft.
  4. Drain potatoes, add milk and use electric beaters to 'mash' the potatoes.
  5. Prepare brown gravy according to package instructions.
  6. Heat popcorn chicken in toaster oven, oven or microwave.
  7. Layer: 1 cup mashed potatoes, 1/8 cup corn, 1/8 cup cheese, 10-12 pieces of popcorn chicken, gravy as desired.

This meal was a great cozy winter night meal. I had some popcorn chicken in the fridge and didn't know what to do with it, and this turned out perfect. Thanks for posting!

We use this recipe a lot! I found a recipe (I'll post it here soon) to make a KFC style popcorn chicken that to us tastes better, when completed, than the original. Thanks Nicole!
