- 3 large plums, cut into wedges
- 709.77 ml spinach, stems removed and leaves torn
- 473.18 ml cucumbers, pared, seeded and thinly sliced
- 59.14 ml red onion, thinly sliced
- 59.14 ml parsley, minced
- 29.58 ml pistachios, chopped

Armenian Dressing
- 78.78 ml safflower oil
- 29.58-44.37 ml fresh lemon juice
- 2.46 ml oregano
- 2.46 ml minced garlic
- 1.23 ml dry mustard

directions
- Combine spinach, cucumber, onion, parsley, pistachios, and plums in a salad bowl.
- Combine dressing ingredients.
- Pour dressing over salad mixture and toss well to blend.

This was a deliciously different spinach salad. I found that 2 tbsp of lemon juice was just right for my taste. Also I substituted canola oil for the safflower oil as this is what I had on hand. Next time I think I might add a little feta or blue cheese to the mix. Thank you Michelle S. for sharing the recipe.
