Apricot and Macadamia Nut Ice Cream

A no-effort ice-cream that looks and tastes beautiful. Recipe can be made a day ahead. You could also add a tablespoonful or two of Grand Marnier if you want to be fancy!

Ingredients Nutrition

  • 2 cups vanilla ice cream, softened slightly
  • 12 cup chopped roasted macadamia nuts (unsalted)
  • 14 cup chopped plain sweet cookie
  • 14 cup of chopped glace apricot

Directions

  1. Place all ingredients in a medium sized bowl.
  2. Stir until combined, and spoon into 4 serving/sorbet glasses.
  3. Freeze till firm.
