- 1 cup cooked chicken, cubed
- 4 cups spinach, fresh
- 1 tomatoes, diced
- 1⁄2 cucumber, sliced
- 6 mushrooms, sliced
- 1⁄4 cup blue cheese, crumbled
- Toss together and serve with Amy's Vinegarette.
Made this for Fall PAC 2012 tag game...quite a good choice with a bowl of soup and some french bread. I did add some slivered onions and used a homemade dressing...delicious. DH enjoyed the spinach for a change in a salad. Thank you for posting.
