Almond Flour Stevia Cookies

This is a basic cookie made with real whole foods. You can spice it up by subbing a different flavor extract. Next time I am going to try adding a 1/4 cup of dark baking chocolate powder and maybe some coconut. I am excited about trying different variations.

I've wanted gluten-free pfferneuse cookies for a while, so I used this as a base and added: pinch of black pepper, 1 Tablespoon cinnamon, 1 teaspoon cardamon, 1/2 teaspoon ginger (might add less next time), 1 teaspoon nutmeg, pinch cloves. They are yummy!

  1. Preheat oven to 300°F.
  2. Soften real butter.
  3. combine soft butter and remaining ingredients.
  4. electric mix until smooth.
  5. form 16 balls and place on ungreased cookie sheet.
  6. bake 20 minutes, stopping at 7 minutes to flatten with fork.
