- 473.18 ml asparagus tips, diagonally cut
- 118.29 ml plain nonfat yogurt
- 4.92 ml curry powder
- 4.92 ml fresh lemon juice
- 1.23 ml salt
- 0.61 ml fresh ground pepper
- 473.18 ml cooked boneless skinless chicken breasts, chopped
- 118.29 ml red bell pepper, seeded and chopped
- 59.14 ml fresh cilantro, chopped
- 29.58 ml sliced almonds, toasted

directions
- Steam asparagus for 2 minutes or until crisp-tender.
- In a medium bowl, whisk together yogurt, curry, lemon juice, salt and pepper.
- Add asparagus, chicken, bell pepper, cilantro and almonds and toss to coat.
- Serve on fresh spinach leaves.
- Serves 4.
