Almond Butter Dark Chocolate Chip Cookies

Ingredients Nutrition

  • 1 cup almond butter (love Barney Butter smooth!)
  • 13 cup honey (can sub real maple syrup)
  • 1 egg
  • 12 tablespoon vanilla extract
  • 12 tablespoon almond extract (or can use all vanilla extract)
  • 12 teaspoon salt (*only add the salt if you are using unsalted almond butter)
  • 12 teaspoon baking soda
  • 12 teaspoon baking powder
  • 23 cup shredded unsweetened coconut
  • 12 cup dark chocolate chips (such as Enjoy Life brand)

Directions

  1. . Preheat oven to 350 degrees.
  2. 2. Oil baking sheets or line with parchment paper.
  3. 3. Stir together first 7 ingredients. Mix well. Make sure honey is fully incorporated.
  4. 4. Add coconut and chocolate chips and mix until well combined.
  5. 5. Scoop with a cookie scoop onto cookie sheets. Bake 9-12 minutes or until lightly browned.
  6. Yield: about 20 cookies with a level 2 tablespoons cookie scoop.
