Aji (Peruvian Hot Sauce)

"This is that wonderful fresh, bright green, hot sauce served in many Peruvian restaurants. It's great on meats, vegetables, and we like it squirted on a roll with butter."

• Yields: 1 squirt bottle
• Serves: 100

ingredients

• 2 bunches cilantro, stems removed
• 1⁄2 cup olive oil
• 3 jalapenos, quartered
• 1⁄2 teaspoon salt
• water, as needed

directions

1. In a blender add the cilantro, oil, jalapenos and salt.
2. Pulse, adding water as needed until it’s well blended but not runny.

I am peruvian and this was nothing near the green Aji.
