Vegan potatoes w/cabbage dish from Lesotho.


  1. Cut up potatoes and cabbage.
  2. Pan-fry onion in hot oil.
  3. Add curry powder to onion.
  4. Add potatoes and water.
  5. Cook for 5 minutes.
  6. Add cabbage.
  7. Cook for 10 minutes.
  8. Cut up and add tomatoes.
  9. Cook a couple more minutes.
  10. Season with salt and pepper.

What a simple, yet tasty dish! I used garam masala curry powder. It added a lively flavor to the veggies. I'm not a vagan, but I enjoyed this as a main dish, and will be using this for a side dish in the future. Thanx for sharing!
