This quick meal is a fantastic healthy alternative to crisps,biscuits etc when you need a small snack to get you between meals. It is one of my absolute favorites! So easy to make.

Ingredients Nutrition


  1. Drain the mozzarella and gently squeeze to get rid of excess liquid.
  2. Carefully slice the Mozzarella into 0.5cm-1cm thick slices.
  3. Slice the Tomatoes into the same thickness.
  4. Arrange/layer in a 1:1 Ratio e.g. Tom,Mozz,Tom,Mozz.
  5. Dab 1-2 teaspoons of Pesto on salad, or plate.
