ingredients
- 10 ounces butter
- 10 ounces flour
- 5 ounces almonds, ground
- 4 egg yolks, hard boiled
- 5 ounces caster sugar
- 1⁄2 vanilla bean, ground to powder

- 4 egg whites, beaten stiff
- 4 ounces caster sugar
- 8 ounces apricot jam, sieved

icing
- 5 ounces caster sugar
- 5 ounces apricot jam
- 1 tablespoon lemon juice
- 15 almond halves
directions
- cream butter and sugar add eggs.
- add vanilla bean
- add flour and ground almonds
- quickly knead pastry dough
- divide dough in 5 parts
- roll out
- bake 4 or 5 thin round layers in a baking pan in turns
- the layers should not be browned to much
- but should be slightly golden
- im guessin 375 for 10 minutes
- filling
- add sugar to egg whites cream until fluffy.
- add sieved jam fold in
- icing beat together everything but almonds
- spread filling thinly betweeen layers
- cover with icing
- decorate with rosettes made from almond halves
- best made 4 days in advance , so it matures and becomes crubly as hapiness.
